Introduction

Hara bhara kabab is a popular north indian vegetarian  snacks that packed with the goodness of spinach  (palak) green peas (matar) and potatoes it's name "Hara bhara" literally means "full of green ,"making it both healthy and tasty wheather you'r serving it as a tea time snack a starter for guest packing for lunch box these kabab sure for hit

Ingredients: 

- 2 cups spinach leaves (palak)  blanched 

- 1 cup green peas (matar) boiled 

- 2 medium potatoes , boiled and mashed

- 1 green chilli chopped

- 1 tsp ginger garlic paste 

- 1 garam masala powder

- 1 tsp chaat masala 

- 1/2 tsp cumin powder 

- 2 tsp gram flour (besan)

- 2 tsp bread crumbs (option for crispiness )

- salt to taste 

- oil for shallow frying 


Instructions

Step 1 - prepare the spinach & peas


- Blanch spinach leaves in boiling water for 2 min drain and cool

- blend spinach and boiled peas into a smooth paste (avoid adding water)


Step 2 - make the kabab mixture


- In a mixing bowl, combine spinach - pea paste, mashed potatoes, ginger - garlic paste, chopped green chilli, garam masala, chaat masala , cumin powder, gram flour, breadcrumbs ,and salt.

- mix well to form a smooth dough- like mixture.


Step 3 - shape the kababs

- grease your hands and shape the mixture into small round patties.


Step 4 - fry the kababs

- heat 2 - 3 tsp oil in a pan.

- shallow fry the kababs on medium heat until both sides turn golden brown.


Serving suggestions

- serve hot with mint chutney or tamarind chutney

- po air with onion rings and lemon wedges for a restaurant - style look

- Use inside burgers or wraps for healthy twist.

  Pro tips :

▶️ Do not add water while  blending 
Spinach and peas  this help the kababs stay firm


▶️if the mixture feels too 

Soft ,add more breadcrumbs or gram flour.



▶️For a healthier version , air - fry or bake at 180° c for 12 - 15 min
