Punjabi chole masala Recipe - spicey & flavourful
Chole, also known as punjabi chana masala,
Is a rich and aromatic curry made with boiled chickpeas cooked in a spicy onion tomato gravy. it's popular dish often served with bhature , poori or jeera rice - perfect for festivals , parties , or weekend treats
Ingredients:
For boiling chole:
1 cup Kabuli chana ( white chickpeas)
Soaked overnight
1 tea bag or 2 dried amla (optional for dark color)
Salt to taste
3 cup water
For gravy :
2 medium onions (finely chopped)
2 tomatoes puree
Ginger garlic paste
Green chilli slit
1/2 tsp cumin seeds
1 bay leaves
1/2 tsp turmeric
1 tsp red chilli powder
1 tsp coriander powder
1/2 tsp garam masala
1/2 tsp chole masala (optional)
Salt to taste
2 tsp oil or ghee
Fresh coriander leaves
Step 1 : soak & boil chickpeas
-- Soak chole overnight in enough water.
Pressure cook with 1 tsp salt and tea bag(or amla) for 5-6 whistles untill soft.
Discard tea bag and keep a chole a side with water .
Step 2: prepare gravy
(1) Heat oil in a pan .add cumin seeds , bay leaf,
And let them sizzle.
(2) Add chopped onion and saute till golden.
(3) Add ginger- garlic paste ,green chilli, saute for 1 minutes
(4) Add turmeric ,red chilli powder, coriander powder
- stir well
(5) Add tomato puree ,cook until oil seprate
Step 3 : combine & simmer
(1) Add boiled chole (with water) into the gravy
(2) Add salt , chole masala,and let it simmer for 10 - 12 minutes
(3) Add gram masala and cook for another 2 - 3 minute
(4) Garnish with chopped coriander leaves.
